I only finished about 2/3rds of yesterday's ricotta and avocado.
But right now I'm having a fabulous supper. I'm busy soaking some cauliflower in order to make a cauliflower quiche to enjoy over the next several days but since there's no way it's be ready in time, I peeked around the fridge and came up with a great dinner. Cheese blintzes!
I mixed some of the 5% goat's milk ricotta with an equal amount of 5% cottage cheese, added cinnamon and vanilla sugar (my plan does not require me to be off sugar. I limit it of course, by my dietitian said to think of myself as not being on a diet ever again. I have to use my head and eat reasonable things, and my body limits portion sizes of course. I still trained myself to be off sugar for coffee but a dash of vanilla sugar in my blintz? Hell yeah!). I also mixed an egg with almond milk, salt, a bit more of the vanilla sugar, and a couple of teaspoons of flour to make a thin batter. Made a crepe, added the filling, and wallah! Cheese blintz.
My diet is lacking in vegetables which is weird for me. I'm a freaking vegetarian, after all. But I find cooked veggies need to be really soft or else they don't go down well. I'm looking forward to the cauliflower tomorrow and for lunch today I had some ground veggie burger mixed with tomato sauce and well-cooked green beans. I generally prefer my green beans bright and crisp but they just wouldn't go down that way, no matter how well I chewed them.
I do, however, plan on trying peeled, fresh cucumbers this week and, if I can find some fresh kale, I may make kale chips. I'm usually a salad-o-holic and being without fresh veggies has been hard. Mmmm, now I'm imagining a salad with greens, chopped tomatoes, shredded carrots, beets, and kohlrabi, slices of cucumbers, garbanzo beans, maybe some quinoa, shredded salty cheese, a dash of lemon juice and olive oil with salt and pepper....yummy. Some day.
I think couscous with stewed veggies may be on the menu for later this week. That should work well enough.
